Pearl's Not-So-Plain Pecan Pie


What goes in it:

Crust:
1    Refrigerator pie crust (from 15-oz box), softened as directed.  (Because Pearl's a busy woman)

Filling:     
1/3     Cup packed brown sugar
1 1/2   Teaspoon all-purpose flour (It was good enough for Grandma...)
1 1/4   Cups light corn syrup
1 1/4   Teaspoon vanilla
3         Eggs (If you can get them fresh out of the hen, all the better)
1 1/2   Cups pecan halves or broken pecans
2         Tablespoons butter melted.  (None of that margarine crap)

How you fix it:
-First heat your oven to 375 degrees F.   Place your pie crust in a 9-inch glass pie pan (and I mean glass)
-In a large bowl mix brown sugar, flour, corn syrup, vanilla and eggs till they're blended all nice like.  
 Stir in your pecans and melted butter.  Pour into crust-lined pan.  
-Bake 40 to 50 minutes or until the filling is puffed and the pie is a real purty golden brown.  Cool completely about 2 hours and store in refrigerator.   Or just cool it off till it don't burn your mouth none, throw a big ol' heaping gob of vanilla ice cream on a slice and have at it.  

Now set yourself down and tell Pearl what's been troublin' ya and she'll try to help out.  Just toss them troubles right here in the dirty laundry.   Don't be shy.

  1. I bake all my "pecan" pies with walnuts. I'm not sure why that makes them better, but it does. And I TOTALLY agree on the refridgerated pie crust, butter not margarine, and glass pie pan.

  2. My first MIL made the best pie crust I've ever tasted. I have never made a pie crust in my life. Do I love Pie? Oh you bet! That's why God made places like Pearl's Cafe! Thanks Jayne!

  3. I have this woman emailing me from China. She hates the culture, hates the people, and says things like "Oh they're so proud of being a 5000 year old culture but they still eat with two sticks and squat over a hole to go to the bathroom. I've tried to gently point out the flaws in her reasoning, but you know, barbarians like the Chinese just can't be justified. Since I live with a savage (Indian), maybe I'm just too open minded about these things!

  4. Okay, if your son wants to marry a girl with no neck, do you mention it to him? Do you point out to him that his children very well might not have necks either? Or do you simply smile and hope for the best? Is it wrong to worry about having no-neck grandchildren? Please advise.

  5. Looks good.Will need to try out this recipe next time I have company. Why a glass pie pan? Don't own one!
    Just made apple, raisin, walnut muffins. Soooo good. My house smells wonderful too! LOL!

    I find it downright odd that the lady in China hates the Chinese and even so, why would she think you would care about it? As for your no-neck grandkids, never dress them in turtlenecks.

  13. Is Harry gay? He likes to mount and be mounted by other boy dogs. Harry thinks this is the most fun thing around to do. Honey has never been mounted by any dog. She doesn't mount anything either. Is she a religious dog? What do you think?

    Yes, I do call it a Walnut Pie. And it's better than your Pecan one.

    Linda - don't worry too much about your grandchildren. My husband and I are living proof that it is possible for two people to produce children that are MUCH better looking than their parent. Of course, the reverse is also true.

  20. I had never heard of pecan pie until my older sister did a six week exchange to the States when she was a teenager and came back and built it for us. Not being a huge nut person, I found pecans fine. Even better when they're in a pie.
